The Best Protective Summer Food

The must eat food of the summer! I eat tomatoes almost daily, particularly in hot weather. Why? Well…. not only are they delicious with cheese, burrata, olive oil, salads, sauces, BUT… they also help to protect our skin from sun damage. Tomatoes are loaded with a substance called lycopene, which helps to protect them from the ultraviolet rays of the sun. In much the same way it can help to protect our skin too


Possibly my favourite recipe:

BURRATA AND TOMATOES

Find some good quality burrata and tomatoes. You can grill the tomatoes briefly if you like. Serve the burrata on top with basil and drizzle of olive oil. So simple and so delicious and addictive! 

PANZELLA SALAD

My dinner last night! Stale sourdough bread, layered with cooked red peppers, anchovies, mozzarella, basil, tomatoes, olive oil, garlic. All left to soak together for 30 mins and enjoy!
